Pancakes (w/Chocolate Chips)
I do let the kids have chocolate chip pancakes from time to time. They know that the rule is no syrup if you have chocolate chips in them. Also, I use the Enjoy Life brand of mini chocolate chips (Allergen Free). Also, "juice" isn't terribly paleo, but it is a hold over from our pre-paleo days. We water it down by about 80%, so it isn't really juice anymore. A lot of times the kids are happy drinking water, and they know juice is a real "treat", only once per day. Until they get old enough to drink coffee, they know that this is their "special drink." ;) They also do like some fruity herbal teas served warm with a cinnamon stick for stirring.
Also paleo pancakes are a good place to talk about food expense. I was just showing a new friend around the grocery store the other day, she is thinking of making the switch to paleo. Coconut flour is expensive. Around $8-12 for a small bag. However, this recipe made enough pancakes for a family of 3 (my husband isn't that big of a pancake person - paleo or not) and only used 1/4 cup of coconut flour. That is not very much flour. For the most part, baking recipes do not use nearly as much "flour" as traditional recipes, so you have to take that into consideration when looking at the price of coconut flour. In addition, this recipe also calls for 4 eggs, each person is eating more than 1 egg with each serving, which is filled with protein, fats and nutrition!
The tinge of guilt in comments including chocolate chips and juice could only come from our circle of nutritional wingnuts. In terms of dessert, I'm thinking a badass cheesecake without added sugar is something I'm going to try over Christmas. I don't have a recipe, though. Thanksgiving was tough. My family insisted on a precooked ham that came with a packet of glaze. Sugar and brown sugar were the first two ingredients. Tough. And turkey in general isn't a very satisfying food. Regardless of preparation, the inherent lack of fat in it leaves me wanting a ruminant to eat. Good thing love of family overcomes food rage.
ReplyDeleteI see you sensed my guilt! Haha. I agree with you about turkey, it is pretty lacking in general. Matt always made fun of me for liking the "dark meat" of turkey and chicken, but now he is the same way. I got so lucky at Thanksgiving; my mother in law made a paleo stuffing. Macadamia nuts, walnuts, sausage, celery, cranberries. It was awesome! And, my oven finally quit in the middle of my paleo pumpkin pie and Matt felt bad enough for me that he ordered me a new stove/oven! ;)
