After Thanksgiving Eats...

Breakfast

This is the kind of breakfast you can fix the Monday after Thanksgiving when you are pretty much out of groceries because you have been sick for a week.  This was my first real spell of being sick since I went paleo in March.  I tried to be in denial about it, but it lingered around.  Honestly, my first task this morning was a major clean-up of the refridgerator because something had went terribly wrong in there last week.  The hubby picked up a lot of the slack last week, but the fridge was no man's land.  After an extensive clean, this was what I had for breakfast.

Bacon, Sweet Potatoes & Spinach 


I used my THRIVE sweet potatoes and THRIVE spinach for this....http://www.shelfreliance.com/KarmaWatters  I rehydrated them, drained them and sauteed in coconut oil.  The sweet potatoes are a really small dice, so they cook up pretty quickly.  Any other day I would have added 2 or 3 eggs to this, but we were out. 

I am sure that it sounds like I am trying to rep this stuff, but I am really just happy to have found a quality food source that saves me some time.  Only one ingredient in those products. I use next to zero processed foods and it is nice to have found an affordable product that I can order a big can of.  And it gets delivered to the front door.  It is kind of heaven.   Now just to get that 5 gallon bucket of coconut oil that the hubby has been teasing me about.  :)

So far I have only tried sweet potatoes, spinach, onions and fruits from THRIVE.  They had a pretty great Black Friday sale. I ordered large cans of the fruits that my little girl likes the most.  I also decided to give the broccoli and zuchinni a try.  Also, the colder it gets the less I feel like dragging the kids out to the store.  I also miss my Farmer's market already!

Dinner

Pizza Meatballs, Spinach salad & Blackberries

These meatballs are awesome! I just added some Trader Joe's pizza sauce to the Everyday Paleo Garden Fresh Meatball recipe.   http://everydaypaleo.com/2010/02/18/garden-fresh-meatballs/   Tasted like pizza! I was too lazy to make dressing, so I just drizzled Ume Plum vinegar (my fave!) and avocado oil on my spinach. Or "leaves" as my 5 year old calls them.  Also, we were pretty out of groceries, so not a lot of fun salad toppings tonight.
