This particular dinner ended up in an entirely different place than I intended. I started with the grand idea to try a new recipe from Paleo Comfort Foods called "Country Captain." It is a Southern recipe...breaded chicken, raisins, tomatoes, onions, garlic and curry. Paleo-fied by the use of almond flour as a breading, of course. I made it for lunch for myself knowing that my husband HATES curry. If he even smells it cooking when he comes in the door, he walks right back out of the house. So I packed up the leftovers for a friend. End result, my friend could have done without the curry as well. I thought it was a pretty delightful dish, but I think I may give up on curry in general. (I even snapped a pretty good picture of the Country Captain but it is mysteriously deleted from my memory card. I think it is an omen.) I'll just get a nice chicken curry at a restaurant every once in a while and call it a day.
So, knowing full well that my husband was not going to eat anything with curry, I just "breaded" a few boneless, skinless chicken thighs in almond flour and set them in the fridge for him. I remembered I had a recipe for chicken picata in my Everyday Paleo cookbook. Turned out GREAT. His first words were "Is that FRIED CHICKEN?" That is probably the gluten coated food he misses most. He even happily let me leave the house for a few hours and took care of the kids, so it must have been extra delicious. This is one of those recipes that is so easy that I don't know why I don't make it very often.
Also, just wondering in general why I don't coat chicken in almond flour and then fry it in butter more often. Delicious. Even skipping the whole dredging in eggs and milk step. Super easy!
I also threw some diced zuchinni in there. Trying out more of my freeze dried food.
