Meal Planning, again.

Time to go grocery shopping. Again.

The sweet potato egg "baskets" were a hit. The hubby has requested them as a pretty permanent snack/breakfast to go to keep in the fridge.  I made some in a cupcake pan, per the recipe, but also made a small casserole dish with 4 eggs in it and it baked up nicely.  I am going to try to do it in a larger dish (9X13) next time and see how it works.  Mostly because I am lazy and don't enjoy cleaning the cupcake pan.

Dinners:
Grilled Salmon w/ Veggie Packets (veggies + sweet potato + coconut oil + dill)
Remember to chop sweet potatoes first and boil for a few minutes while you chop the rest of the veggies so it all cooks evenly.


Oyster Stew (The hubby was gifted some oysters from an oyster fisherman...if that is what you would call that job. I am sure it has a better name than that, but I am tired.) Looks easy and very paleo! Coconut milk, oysters and bacon grease anyone?

Oyster Stew 
1 c  coconut milk
 1 c  chicken or vegetable broth
 1 pt Shucked oysters
           -(do not drain)
 2 tb bacon grease
 1/4 ts Salt
 1/4 ts Celery salt
 Pepper
 Paprika

  HEAT 4 SOUP BOWLS. Heat the milk and broth in a large heavy saucepan over
  moderately high heat. Drain the oyster liquor into a separate saucepan
  and bring to a boil. Spoon 2 tablespoons of the hot liquor into a third
  saucepan, add the oysters and bacon grease, and heat, uncovered, over
  moderate heat, swirling the oysters around 3 to 4 minutes until their
  edges just begin to ruffle. Add the oysters at once to the hot milk
  mixture, mix in the hot oyster liquor, salt, celery salt, pepper and
  paprika. Ladle into the heated bowls and serve piping hot.


Chicken 2 Ways this week....
1- Cooking whole chicken in a crock pot with soy sauce. (I am allergic to soy sauce, so I use a recipe to make a substitute) http://allrecipes.com/recipe/soy-sauce-substitute/detail.aspx
Serving chicken with broccoli and cauliflower and pineapple mashed sweet potatoes
2-Shredding leftover chicken to make Asian style lettuce wraps.  Will likely include carrots, mushrooms, red peppers, cabbage, cashews & green onions.  Using leftover "soy sauce" and cashews to make a sauce for the wraps.  Winging this one, as usual. 
Kid Questions....
I have talked to a couple of people about the kids (ages 3 & 5) being paleo. They are not.  I have one that eats everything and one that eats nothing.  We do try to limit gluten, sugar as much as possible.  We try to eat as little fast food and junk as possible.  I keep putting veggies, fruits, and meat out for the picky one...it will rub off sooner or later.  We talk about the best way to eat and I think that over time things will work themselves out.  I try to make sure if they are hungry that they get a good serving of protein in.  They know what has protein and what doesn't.  If they only want cereal or a rice cake or crackers, then they aren't really hungry. Typical things you will find my kid(s) eating:
Apples
Sesame Butter/Almond Butter
Gluten free sandwiches (I like Udi's bread)
Bacon/hot dogs (the best I can find/afford)
Paleo Pancakes/Gluten free pancakes (even with chocolate chips, sometimes) My worst offense.
Eggs
Hamburgers
Chicken & Chicken nuggets (still tweaking my homemade recipe, it is getting better)
Clif brand fruit ropes
Rice Cakes
Sweet Potato fries
Pizza
Pumpkin seeds
Nuts
Carrots/Broccoli/Cauliflower w/ dip
Yogurt or Kefir
Chex cereal (gluten free)
Gluten free cookies and brownies...I do sneak extra hemp protein powder into this kind of stuff. (Pancakes, too.) 
Smoothies (fruit, coconut milk & protein powder)
