I have been pretty horrible about menu planning lately, which has resulted in some "interesting" dinners, a new recipe, a failed disaster at coconut shrimp and also knowing that we can eat at Fuddruckers on Monday and Tuesday for less than $20 because the kids meals are 99cents. That is classy.
I am capable of doing better, sometimes something just has to give.
This week:
Crockpot Beef and Broccoli
Salmon, sweet potatoes & brussel sprouts
Albigondas soup (from Everyday Paleo...kind of a spicy meatball soup served with avocado)
Hot Wings (I have been craving Hot Wings so much lately I would swear I was pregnant again. I'm not.)
Spinach, Apple and Sausage Salad with Spicy Apple Vinegarette (from Clean Eating magazine)

Still experimenting with my Thrive products Freeze dried (not dehydrated) sweet potatoes, onions, spinach & fruits. So far, they have been cooking up well. Nice to have on hand in case I am behind on dinner, and I assume would come in handy in an emergency situation. My little girl is a PICKY eater and really weird about textures, so she is happy to snack on some of the fruits and I am that desperate to get them in her. The prices on the fruit are a much better deal than picking them up at Trader Joe's or Whole Foods. I have not built up one of those year long stockpiles in my basement, so don't plan on heading here for the Zombie Apocolypse just yet.
