It is Wednesday evening and I STILL haven't made it to the grocery store. Major FAIL. On the plus side, I have some leftovers in the freezer and enough eggs, bacon and veggies to get us through a few meals. So that explains why this is what we had for dinner tonight.
Scrambled eggs with Sweet Potato, Asparagus & Bacon
For the less experienced cook...Start with chopping up the bacon and throwing it in the pan. While it is cooking, dice/grate sweet potato and asparagus. I then threw them in with the bacon to finish cooking. When all was done, I pushed it to one side of the pan and scrambled my eggs on the other pan. One dish cooking means less to clean up later. I did season this with some Breakfast Sausage Seasoning for Penzey's spices. Salt, Pepper, Sage, Paprika were the main elements.
For the kids, I was able to make some "chicken nuggets" that the daughter said was "as good as Chick-Fil-A. I doubt that, but was thrilled that she ate a ton. She is a picky eater and a tough cookie! I didn't get a good picture because the kids started eating them so fast.
Tips for experimenting with "chicken nuggets."
1. Cut chicken into small, even pieces.
2. Mix almond meal & coconut flour for the breading.
3. Season with salt/pepper if you would like.
4. Bake or Fry, depending on what your kids like.
5. Serving with "fancy" toothpicks works around here. :)
