Pork, Cinnamon Muffins and Mystery Chicken

I haven't blogged in a while, so I thought I should just see what was on the SD card.

Pork chops with veggies and a mustard cream sauce

No recipe for this one. I was cleaning out the fridge before we left for vacation. Sauteed a lot of leftover veggies (spinach, sweet potato, peppers, apple) in coconut oil.  Took them out of the pan and kept them warm.  Fried pork chops (thin, so they cooked quickly) in coconut oil, and removed them from the pan.  Added half n half and dijon mustard to the pan, turned up the heat and cooked it for a couple of minutes till it thickened up.  Poured it over pork and veggies.

Cinnnamon Muffins/Cinnamon Blueberry Muffins


I liked this recipe even more than the last ones I made.  Very cake-like and very cinnamon-y.  The recipe called for making a sugary icing to go on the top, but I dont want to get my kids used to that kind of luxury. :) These are a new breakfast staple with bacon.  I just threw some blueberries into the mix after a put half the batter into muffin cups.  I have no issue with putting a little pat of melted butter on top if that is what the kids want, but no icing.  They are sweet and maple-icious as is.

 Chicken and Greens


This particular night of dinner taught me an important lesson in organization.  You must LABEL things before putting them in the fridge or freezer.  A few weeks ago, we were going out of town and I did not want the package of organic chicken legs to go to waste. So I put them in a large freezer bag with leftover coconut milk and SOMETHING else.  For the life of me, when I pulled out the bag to thaw it, I could not remember what I seasoned this bag of chicken with.  We were just back from vacation and were grocery poor, so I put the thawed chicken, coconut milk and mystery spices into the crockpot and hoped for the best.  Eventually I remembered that it was a dip seasoning packet someone had purchased for me. We don't make a lot of dips, this one was a Cilantro Lime flavor. It turned out to be pretty good.  For a side, I dug a bag of frozen mustard greens out of the freezer & boiled them according to the pkg. I then drained them and sauteed them in bacon grease with some chopped apple.  Added a little salt and pepper.  The hubby even liked the greens. Pretty much everything goes down a little easier with some bacon grease.
