Here is a picture of my meal plan for the week after it got shoved down in my purse and someone put a piece of old gum on it thinking it was scrap paper. Not pretty. This is what happens when you make your meal plan and grocery list in the back of a car on the way to a baby shower at a winery.
Also, The Best of Clean Eating is one of my favorite cookbooks to look through. Clean Eating is a great magazine. The recipes aren't paleo but most of the principles are right on and usually can be adapted with no problems.
Monday - We are having company over for dinner, so I am trying to do a traditional meal that will appeal to everybody and not be overly-paleo shocking. Also, the hubby wants me to make bacon wrapped dates because that is about his favorite snack ever and I don't do that kind of thing very often. Who really couldn't like those? Making a big veggie tray with dips should leave us with healthy snacks for the rest of the week.

Tuesday - Trying out a recipe that I found in the Clean Eating book...scallops with a blackberry-chipotle sauce. Made from fresh blackberries. I have bunch of chipotle "cubes" in the freezer and this is another way to try to use them up.

Wednesday - Whole Chicken in a crockpot day! Attempting a curry style, but making some egg baskets for backup in case the hubby doesn't like it. He does not typically care for curry. Reminded by a friend that I should try to make Kale chips, so giving that a try as well. Guessing that I should have some leftover mashed sweet potatoes to go along with this.
Thursday - There is a Puerto Rican Beef recipe in the Everyday Paleo cookbook I have been meaning to get around to. Planning on serving it over shredded sweet potato and zucchini.
